1 cup lentils
3 cups water
3 ½ oz (100g) spinach and/or arugula
1lb (450g) button mushrooms
2 tablespoon balsamic vinegar
2 tablespoons olive oil
½ tablespoon blackstrap molasses
½ teaspoon salt

1Rinse the lentils really well and add to a medium pot. Cover with 3 cups of water and boil at medium-high heat for 30 minutes or until soft. Set aside.
2Clean the mushrooms and remove the stems. Slice them up and fry in 1 tablespoon of olive oil over medium heat for 10 minutes or until cooked through and starting to brown.
3Make the dressing: mix 1 tablespoon of olive oil, balsamic vinegar, blackstrap molasses and salt until combined.
4Combine mixed greens, cooked lentils and fried mushrooms in a bowl, drizzle with dressing and serve.
