Mushroom Lentils

INGREDIENTS1 cup lentils
3oz (100g) spinach and/or arugula
1lb (450g) mushrooms
2 tablespoon balsamic vinegar
½ tablespoon blackstrap molasses

We Used Button mushrooms.

Instructions

1Rinse the lentils really well and add to a medium pot. Cover with 3 cups of water and boil at medium-high heat for 30 minutes or until soft. Set aside.

2Clean and slice the mushrooms. Transfer them to a frying pan, add ½ of water and saute over medium heat for 10 minutes or until cooked through and starting to brown.

3Make the dressing: mix balsamic vinegar and blackstrap molasses until combined.

4Combine mixed greens, cooked lentils and fried mushrooms in a bowl, drizzle with dressing and serve.
