Teriyaki tofu tastes delicious and it’s very high in protein and Calcium. Serve it over rice or cauliflower rice for a low carb option.
¼ cup soy sauce
1 tablespoon vinegar or lemon juice
1 tablespoon blackstrap molasses or honey
1 tablespoon arrowroot or cornstarch
1 garlic clove or 1 teaspoon garlic powder
½ oz (15g) ginger or 1 teaspoon ginger powder
½ cup water
1Cube tofu and set aside.
2Crush garlic and grate ginger if using fresh. Alternatively, you can use garlic powder and ginger powder.
3Combine ginger, garlic, soy sauce, vinegar, molasses, cornstarch and ½ cup of water in a medium size saucepan.
4Place over low heat and stir using a whisk. Continue stirring until the sauce thickens. Add tofu and cook for another 2 minutes. Serve hot over rice or cauliflower rice.
Swaps & Tips
- You can use honey instead of molasses;
- You can use cornstarch instead of arrowroot;
- Use garlic and ginger powders instead of fresh garlic and ginger to simplify on the prep;
- ou can also blend all the ingredients, except tofu, in a food processor for even shorter prep time.
