Spinach White Beans

This dish will keep you full and satisfied for a long time. It’s very high in protein, fiber, iron, magnesium, phosphorus, potassium, zinc, copper and manganese. It is also rich in vitamins A, C and K.

1 cup white beans
3 cups of water
2 cups frozen spinach
1 onion
½ cup sun-dried tomatoes
1 tablespoon olive oil
1 teaspoon salt

1Soak the beans overnight in plenty of water. Rinse them well and transfer to a medium-sized pot. Cover with 3 cups of water and boil for 60 minutes at medium heat or until they become soft. Drain and set aside.

2Take spinach directly from the freezer and add it to a non-stick frying pan. Dice the onion and add it to the spinach. Mix well, cover the frying pan with a lid and saute the spinach and onion at low heat for 10 minutes. Uncover the lid and stir until all the water has evaporated.

3Cut the sun-dried tomatoes into thin strips. Combine them with spinach, onion and beans in the frying pan. Drizzle with olive oil, season with salt and stir-fry for another couple of minutes until everything is incorporated. Serve hot.
