Rice with spinach is a simple but highly satisfying and nutritious dish. It can be made with white or brown rice, fresh or defrosted spinach. If you are using brown rice, soak it in water overnight before using to reduce cooking time.
½ cup rice
1Clean and dice the onion. Saute the onion and spinach together in ½ cup of water for 3-5 minutes in a small saucepan over high heat.
2Rinse the rice under running water really well. Drain and add to spinach and onions. Cover with 1 cup of water and bring to a boil. Once the water begins to boil, lower the heat to medium. Cover with a lid and cook for 12 minutes.
3Once the time is up turn the heat off and let the rice sit, still covered, for another 10 minutes to allow it to set.
