Roasted Butternut Squash

Butternut squash is incredibly easy to make and it tastes just as good and it is just as filling as potatoes. It has a similar texture and the flavor of sweet potato but it’s very low in Calories. It’s very high in vitamins A and C and it’s very high in fiber. Top it with pumpkin seeds and its protein, manganese, phosphorus, copper and iron contents will skyrocket.

1 butternut squash
1 tablespoon pumpkin seeds (optional)
1 tablespoon olive oil
1 teaspoon salt

1Cut butternut squash in half, clean out the seeds. Cut into bite-size pieces.

2Arrange squash on a baking paper on a baking tray in a single layer. Coat with olive oil and season with salt.

3Roast in the oven at 464°F (240°C) for 20 minutes or until soft. Top it up with pumpkin seeds and serve.
