1 butternut squash
1 tablespoon pumpkin seeds (optional)
1 tablespoon olive oil
1 teaspoon salt

1Cut butternut squash in half, clean out the seeds. Cut into bite-size pieces.
2Arrange squash on a baking paper on a baking tray in a single layer. Coat with olive oil and season with salt.
3Roast in the oven at 464°F (240°C) for 20 minutes or until soft. Top it up with pumpkin seeds and serve.
