If you have a powerful food processor, this is an absolute gem to make. It’s quick, easy and it only needs one ingredient: red lentils. Simply grind a cup of red lentils into flour, add water, spread into a layer on a baking sheet and bake. Each of the flatbreads you make, and there are 9 in total for this recipe, will give you 5g of protein each. They’ll make a great addition to any meal.
1 cup red split lentils
1 cup water
½ teaspoon salt
⅛ teaspoon black pepper

1Grind red split lentils into flour.
2Add water and mix well. Set aside for 15 minutes to let the flour soak up the water.
3Pour the mixture on top of a baking sheet on a baking tray and spread it with a spoon. Bake in the oven at 374°F (190°C) for 10 minutes.
4Once baked, allow to cool for another 5 minutes. Use scissors to cut the flatbread (along with the paper) into 9 squares. Peel off the baking paper and serve.
