This is a light and delicious salad that is relatively easy to make. We use cucumbers to beef it up here but you can swap the cucumber with avocado if you prefer.
1lb (400g) prawns, shelled and defrosted
3 small cucumbers
1 tablespoon mayo or plain yogurt
1 tablespoon tomato paste
½ teaspoon salt, if using yogurt
1Fill a saucepan with water and bring it to a boil. Add the frozen prawns and boil at high heat for 4 minutes. Drain and set aside to cool.
2In the meantime, wash the lettuce leaves and shred them into a bowl. Dry them beforehand with a salad spinner or paper kitchen towel.
3Peel and slice the cucumbers and add them to the lettuce.
4Add the prawns.
5Mix the mayo (or yogurt) and the tomato paste together and serve along with the salad in an individual bowl.
