Kidney Bean Salad

This simple salad is a good source of Protein, Vitamin K, Thiamin, Iron, Magnesium, Phosphorus, Potassium, Copper and Manganese, and a very good source of Dietary Fiber and Folate.

INGREDIENTS 1 cup (8oz / 240g) cooked kidney beans
2 cups (10oz / 300g) green beans
2 tablespoons vinegar
¼ cup of water
Makes 2 portions 350 Calories per portion

We UsedBalsamic vinegar.
Level UpAdd 1 tablespoon of pine nuts or sunflower seeds and ½ tablespoon red pepper flakes.

Instructions

1Break green beans into bite-sized pieces. Add them to a large frying pan with ¼ cup of water. Saute at high heat stirring occasionally for 5 minutes. Drain the water if there is any left.

2Combine cooked green beans with cooked kidney beans in a bowl, add vinegar, seeds and nuts, if using, and serve.
