This salad is loaded with antioxidants and vitamin C and it’ll make a perfect side dish for any meal. It’s refreshing and juicy and can be made without adding any salt, although that’s totally up to you and your tastebuds.
What makes this salad awesome is the fact that it takes a while to get through as it requires some serious chewing. The best thing we can do is slow down when we eat it, take our time and allow our bodies to adjust and process what we are eating and for our blood sugar to stay at a healthy level. Chewing through a pile of cabbage pretty much guarantees that.
1Peel and grate the carrot. Cut the cabbage into strips.
2Combine both in a salad bowl and drizzle with balsamic vinegar. Season for taste and serve!
