Black-Eyed Pea Salad

This salad is a good source of Dietary Fiber, Vitamin A, Calcium, Magnesium and Potassium, and a very good source of Vitamin K, Folate and Manganese.

INGREDIENTS 6oz (480g) cooked black-eyed peas
2 cucumbers
Makes 2 portions 280 Calories per portion

Level UpAdd 2 tablespoons of fresh parsley and 1 tablespoon of balsamic vinegar.

Instructions

1Finely dice cucumbers and mix them with cooked black-eyed peas. Drizzle with balsamic vinegar, sprinkle with chopped up parsley, if using, and serve.

Tips

  • You can use canned black-eyed peas. Open the can and drain it of liquid. Two 16oz cans yields 16oz (480g) of black-eyed peas when drained.
