Arugula Pear Salad

This salad is very high in Vitamins A, C, K and folate. It is also high in calcium, manganese and copper.

INGREDIENTS3 oz (100g) arugula leaves
2 small pears

Level UpAdd 1 oz (30g) graviera cheese, ¼ cup walnuts and ⅛ black pepper.

Instructions

1Add arugula leaves to a bowl.

2Core and slice the pears and add them to arugula leaves.

3Sprinkle the salad with cheese and walnuts, and season with pepper.

Tips

  • It doesn’t need salt but that’s up to you.
  • You can also use any hard cheese instead of graviera.
  • Additionally you can top it up with seeds and dried berries for additional nutrient content.
