This salad is very high in Vitamins A, C, K and folate. It is also high in calcium, manganese and copper.
It doesn’t need salt but that’s up to you. You can also use any hard cheese instead of graviera. Additionally you can top it up with seeds and dried berries for additional nutrient content.
3 oz (100g) arugula leaves
2 small pears
1 oz (30g) graviera cheese (optional)
¼ cup walnuts
½ tablespoon olive oil
⅛ black pepper

1Add arugula leaves to a bowl.
2Core and slice the pears and add them to arugula leaves.
3Sprinkle the salad with cheese and walnuts, season with pepper and drizzle with olive oil.
