                DorothyMH it was pretty easy for me to eat a salad every day, yes. What I forgot to mention in my previous post was that I also achieved my 2nd stretch goal for the challenge, which was to eat a different salad every day for the 30 days. This was a little more challenging given that most of my cooking is to feed only two people, but I share a refrigerator with a third person who usually will not eat what I prepare. Squeezing all of those different salad greens and other veggies into the refrigerator was a challenge at times, but I got it done.

                My first stretch goal for the month was simply to eat at least 30 different vegetables over the course of the month. I achieved this in just under 2 weeks. Over the course of the entire month (counting 31 days here, from January 13 - February 12) I ate a total of 47 different vegetables (89, if I count different varieties of beans, different varieties of lettuce, etc. as different veggies). This represents almost every kind of fresh vegetable that is available for sale during the winter in the town in which I live. [I only missed yams (Dioscorea), yuca (Cassava), and a couple of the winter squashes (not sure exactly which ones, as I ate pumpkin soup from my freezer and don't remember which varieties of squash I'd used to make it).]

                Overall, I ate a wide variety of really delicious food last month, had good energy levels pretty much all day long every day, and never felt hungry. I am definitely keeping "a salad a day" on my list of things to try to do every day going forward.

                    I know what you mean. I'm on sick leave and I just can't get myself to go to sleep early. I watched netflix until 3:30 in the morning last night.

                      I have the opposite problem...i fall asleep way to early! My husband goes to our bedroom right after dinner most nights and watches TV in bed. I join him, but I can't stay awake, so I am generally out by 8pm lol. I don't sleep good though, so I never feel like I've had enough sleep.

                        Amirsh Trbrat75 my problem is usually leaving myself too many active things to do after dinner. Ideally, I'd like to be in bed from 10PM to 6AM. But when I finish eating at 7PM and still have to do half (on some days all) of my workout, plus walk the dogs, plus clean up the kitchen & do the dishes, plus deal with whatever technical problems my parents are managing to have with their television that evening, but what I really want to do is relax... well, I procrastinate. And end up getting to my workout far too late. I really need to start getting the at home portion of my workouts done before 8AM (before anyone else is awake) so I can be sure to get finished without interruptions. Then, if I can just make myself deal with the kitchen and walk the dogs immediately after I've finished eating, I could relax for the final hour of my day and still be in bed by 10. It's really hard to get onto this schedule however, when I'm beginning from a place of going to bed late the night before.

                        I was hoping to turn things around today, since I have so many leftovers in the fridge right now, I don't need to do much to prepare any meals today. But my father's attendant flushed something she should not have done yesterday and blocked up the plumbing at that end of our house. The blockage was not something we were able to fix with a plunger. So this morning, my mother tried to flush my father's business down our toilet, which resulted in blocking our toilet too. Now not only are both of our toilets blocked, but the main drain from the house is blocked too, such that even the kitchen sink is backing up. Because of procrastinating last night, I did not get the dishes done yesterday (in spite of getting to bed so late). And now I cannot run the dishwasher or even do dishes by hand more than a couple at a time. So our dishwasher is still full of yesterday's dirty dishes, the kitchen counter is piling up with today's dishes, I'm having to pee into a bowl and then go outside in the snow to empty it, we need a professional grade snake to fix our plumbing problem (which is not something we own, so we need a professional plumber, and we cannot get one of them to come around until tomorrow), and to top it all off, our microwave shorted out last night, so re-heating leftovers is not as simple or quick of a process as I had expected it to be. (I am very thankful I just completed that Salad-a-Day challenge and therefore have heaps of leftovers in my refrigerator right now which can be eaten cold.) I do have one time-saver in all of this, which is that I don't need to set aside time for a shower today since I don't currently have reliable enough drainage to risk taking one. So yeah. Fun times. But I'm going to do my best to get my schedule back on track, in spite of the complications.
