        *I had partially used cans of both coconut milk and pumpkin in the fridge (more than half a can each, but idk by how much). Added whatever butter was left in my butter dish, melted. Few eggs (2? 3?) Some brown sugar (less than a cup). Salt, bunch of pumpkin pie spice, dash of smoked hot paprika. Bunch of desicated unsweetened coconut, bit of flour, bit more unflavored whey protein. Folded in not quite half a bag of dark chocolate chunks. Baked for 30ish mins, in an idk how hot bc I washed the numbers off the dial w oven cleaner oven in an 8×8 square pan. It is AWESOME and I will never replicate it bc measured nada LOL

                That pumpkin loaf is gonna screw up my maintenance! I made some a couple days ago. Love it so much!!! But my husb cuts GINORMOUS pieces!! “Just one” he says, as it’s a quarter of the damn loaf!!!

                        I ate the last slice yesterday. It was only left bc I cut it up into small portions day 1 and hubby didn't eat any bc he only wants baked good when they're fresh.

                          Ah, so you PRE-cut it??? Good idea! I was considering making it into muffins, versus a loaf.....Husb says just don’t make any more for a while....but....it’s the HOLIDAY time when I WANT punkin stuff!!!

                            Yeah... idk if it is a healthy habit overall or not but, I tend to put "junk" food into single serving portions. (Or just buy things like ice cream in pints/chips in small bags from bodega.) I probably won't get up from couch to get a 2nd serving or something pre portioned.
