Tofu is delicious, especially if you roast it in the oven. It’s super easy to do, too. Simply cut it into cubes, lightly coat it in olive oil and then roast it in the oven at high heat for a quick meal. Use baking paper instead of foil and you won’t need to turn the cubes over halfway through - it’ll cook evenly. It goes well with rice and broccoli.

1Preheat the oven to 464°F (240°C).
2Cut tofu into cubes and coat lightly with olive oil. Arrange it on a baking sheet with enough space between each cube.
3Roast it for 4 minutes at a grill setting (or fan if you don’t have a grill) or until it turns golden. Serve hot.
