Potato Tuna

Potato served with tuna and cottage cheese is a highly nutritious dish. It’s high in protein and offers a whole range of B vitamins. It’s high in vitamins A, C, Niacin, B6, B12 and contains good amounts of calcium, manganese, phosphorus and selenium.

Good to know: By chilling sweet potatoes overnight we allow them to develop resistant starch that functions like soluble fiber. It aids digestion and helps feed the microflora in our gut.

2 sweet potatoes
1 container (200g) cottage cheese
1 can (100g) tuna
Makes 2 portions

1Steam or boil sweet potatoes the day before for 25 minutes or until soft. Chill in the fridge overnight.

2Cut potatoes in half and load each with half a can of tuna.

3Top it with cottage cheese and serve.
