This dessert is very low in cholesterol and sodium. It is a good source of Phosphorus and Manganese, and a very good source of protein and dietary fiber.
You can use any naturally sweet ripe fruit instead of persimmon as well. A ripe banana or a cup of sweet strawberries will work here too. It tastes creamy with just the right balance of sweet and sour.

10oz (300g) silken tofu
4 tablespoons chia seeds
½ lemon juice
