A great way to make pasta healthy is to turn it into a salad. Use any vegetables you have on hand - cucumbers, tomatoes, avocado, peppers, leek, onions, peas or corn - and then use olive oil and salt to dress it up. The nutritional value of the dish instantly goes up!
You can use any type of pasta for this recipe. We recommend using chickpea or buckwheat pasta for their additional nutritional value.
1Fill up a medium size pot with water and bring it to a boil. Add pasta, set a timer and boil the pasta for 8 minutes. Drain and allow to cool.
2Peel the cucumbers and clean the pepper. Dice the vegetables.
3Combine the pasta the the vegetables, add olive oil or balsamic vinegar and season with salt, if using.
Increase protein content of the meal by adding: tuna, eggs, nuts or cheese (any type). For a mediterranean twist add feta cheese and olives.
