Lettuce Egg Salad

This simple salad is high in protein, vitamins E and K, vitamin B12, and Omega-3 and Omega-6 fatty acids. It’s simple and light and it’ll make a perfect base for a more complex meal. Sprinkle it with nuts and seeds for additional protein, fiber and iron. Add goji berries to boost vitamin A, riboflavin and selenium.

½ medium lettuce head
2 eggs
½ tablespoon olive oil
½ teaspoon salt

1Boil or steam eggs in an egg maker. If you are boiling them, cover them with water and bring to a boil. Turn the heat off and let them sit in water for 14 minutes. If using an egg maker, run it for 14 minutes, or 12 minutes if they were kept at room temperature. Remove from heat, cool under running water and shell.

2Seperate the lettuce leaves, wash them and break into bits using your hands. Dry them using a salad spinner or a paper kitchen towel.

3Quarter the eggs and add them to the lettuce. Drizzle with olive oil, season with salt and serve.
