If you can get Kale in season it is very cost-effective. Kale offers more than twice the amount of vitamin C spinach does. It is linked to improved heart health, increased weight loss, and protection against disease and in a salad, with some garnish provides an excellent way to serve what is essentially a booster to beneficial gut bacteria. 1 tablespoon balsamic vinegar
1Rinse kale well, dry and shred with your hands into a salad bowl.
