1 medium eggplant
garlic or garlic powder
salt & pepper
1Pierce the eggplant with a fork a few times.
2Place in a foil boat and wrap it up.
3Bake in the oven at 200° C (392° F) for 45 minutes (you may have to flip it one once half way through). When it's done it should feel soft as a spoonge.
4When the eggplant is cool enough to work with, cut it open and scoop out the inside.
5Blend the eggplant with a hand blender or mash it with a fork and add spices.
