Quinoa is high in protein and it contains all nine essential amino acids. It is also super easy to make. You can eat it on its own or you can use it as a base for salads or other dishes.
The grain’s main defence from predators is a natural coating of a substance called saponin - it discourages birds from eating it. If you cook quinoa without thoroughly rinsing it first, it’ll taste bitter. Make sure you rinse the grain for at least 2-3 minutes under running water before cooking to remove the coating.
