Cauliflower Mushroom Mash

This is an all-in-one supermeal. The dish is high in protein, fiber, vitamins C, K, folate, B6 and especially vitamin D. It is also high in iron and potassium. All that and it’s low in Calories.

INGREDIENTS
2lb (1kg) cauliflower
2 oz (60ml) almond cream
1 oz (30g) dried shiitake or 3 oz (90g) button mushrooms
1 onion
½ teaspoon salt + 1 pinch
½ tablespoon olive oil for frying

1Split cauliflower into florets using your hands; peel and quarter the onion. Steam the florets and onion for 20 minutes. Drain well.

2If using dried mushrooms, cover them with boiling water and allow to rehydrate for 20 minutes, then drain.
If using fresh mushrooms, clean and slice them.

3Combine with almond cream and mash using a potato masher or a food processor.

4Stir-fry mushrooms in ½ tablespoon olive oil in a frying pan for 5 minutes. Season with a pinch of salt. Top cauliflower with mushrooms and serve. Sprinkle with spring onions if you have them on-hand.
