    Sweet potato flatbread

    So, I usually don't post much here, but today I tried the sweet potato flatbread and what can I say? It was amazing!

    Since I'm currently on a plant-based diet and I'm allergic to A LOT of food (including nuts and a lot of different seed kinds), I'm always happy to find some new recipes I can try out. I made the flatbread with whole spelt flower, added some salt and pepper and it turned out really good. I had some problems with removing the baking sheet after I rolled out the (sticky!) dough, so I decided to leave the baking sheet on top of it until it was baked and it worked fine. My initial idea was to use the flatbread to make some Kumpir-like supper, so I added spinach, kidney beans, carrots, red cabbage and a bit of vegan mayo on top of it.

      We tried the sweet potato flatbreads last night with the rice balls. Both were made with the 'level up' suggestions. The rice was also cooked with tumeric because the kids wanted 'yellow' food.
      The flatbreads were really tasty and easy to make. I'm glad we have some extra in the fridge but the kids were split on them.
      The rice balls were a universal hit but we will be making them smaller next time.
