                Thanks. My grandmother used to make the dumplings a lot, always something to look forward too. apricots are great. doing the dumplings with plums or even mirabelles is paradise.

                      I looked up apricot dumplings, having never seen them before (and especially because the cut version looks like a scotch egg and that's just awesome). I found the dough can be made with either potato or cheese. Which do you prefer/make?

                          It really looks like a scotch egg, that is indeed a marvelous look which I really like. There are indeed a lot of dumplings. For our dough didn´t used potator nor cheese.

                          For the recipe we combined several recipes from the internet, this was our approach:

                          for the dough:
                          200g Skyr
                          100g flour + 2 tsp (afterwards)
                          1 egg
                          25g warm butter
                          1 pinch of salt (best make it two )
                          2-3 tsp psyllium husk

                          for the filling:
                          8 apricots (or something other fruits at hand) and a little piece of marzipan

                          crumbs:
                          60g breadcrumbs
                          60g gound almonds (or other nuts)
                          1 Tbsp sugar / cinnamon mixture (or only sugar, to your liking)
                          3 Tbsp butter

                          The original recipe uses quark instead of Skyr. Because Skyr contains more water, we had to use psyllium husk and a bit more flour. So it can depend on your approach. Mix the butter, salt and egg until foamy. Add flour, skyr and knead to a dough. If the dough is too wet, add psyllium husk and wait a few minutes. If it is still too wet, add 2 tsp flour. Put the dough into a clingfilm and let it rest in the fridge for 1,5 hours.
                          Prepare the apricot: wash, dry, open up on one side remove the core and add a piece of marzipan.
                          For the crumbs: just put the ingredients into a pan and roast until they are finished.
                          Knead the dough again, divide it into 8 pieces and form round disks in your hand.
                          Now, just put the fruit inside and close the door to paradise.
                          Bring water to boil and add salt. Put the dumplings in and let it simmer for about 10-12 minutes. They are finished when the are afloat and spinning. When they finished, put them out, let them drip off and roll them in the crumbs. Finished.

                          Enjoy.
