But on a more serious matter: Ebbelwoi or „Apfelwein“ is the „hessian national drink“ - You can also call it „Stöffsche“, it is our magic potion It was good at least for our taste: because regarding „Ebbelwoi“ this depends on the person. Some like it more acid / sour, some more sweet, though. for us it was perfect.
Aaah, Apfelwein! We made cider a couple of years ago, but it's not sweet enough for my taste.
the secret is adding enough sugar after fermentation. The Process is called „Aufsüßen“ (sweeten up process?) There are tables for the perfect ratio. the less you add, the more sour it is, and vice versa. So, if you ever do it again, this is the key to make it more sweet afterwards.
Unfortunately, my husband much prefers it in its current "dry" version, and he's the main ciderer in the house... I'll stick to my kombucha, I can make it sweet and acidic at the same time
