    JCU and Anek, I know my mistake : usually, I make the kombucha soaking 30g of black (or green) tea for 6 litres, this time I put 15 g of tea and 15 g of red vine. So not enough tea. When I make nettle kombucha I use the usual amount of tea and add the nettles.
    Anek, yes, I let a thick scoby in the jar, the thin scoby I was spoken about is the new layer. Mine is about 5 cm thick, like yours. The taste is far better with a thick scoby.

    Mainly by the scoby being thin, don't you use the same scoby over and over? Mine is about 5-7 cm thick, one could throw anything at it and it'll survive...
    Just curious how you make your kombucha!
