Beet kvass:
1 kg beets, unpeeled and washed thoroughly, then sliced (you can use more than 1 kg of course, but for a first attempt it is always better to try with less)
boiling water
salt
peeled garlic
all spice, bay leaf, cumin seeds
1 slice of sour dough rye bread, dried
big jar
cloth and rubber
Place sliced/chopped beetroot in a jar, tuck the garlic here and there (add as much as you like), add spices. Dissolve salt in water (proportions: 1 table spoon per 1 liter of water). If you house is warm, you can let the water cool completely before adding it. If it is rather cool, you can add it while it is still warm, even very warm or hot. Cover the beets so that none of it is over the surface. Top it all with the slice of bread and if possible put a small plate on it, upside down, and put a heavy stone on the plate. This will prevent the bread and the beets from floating on the surface. It is better if it is all submerged. If you cannot do it this way, it should be also OK. Cover the jar with the cloth and keep it in a warm place (can be oven heated up to 40 degrees from time to time during the day). Some people recommend stirring the kvass once a day and I find it useful, too. After 1 or 2 days you can remove the bread. It is there to help start the fermentation process, without it it is still doable but it is a slower process. After 5-7 days (or even sooner in warmer houses, or later in colder ones) you should have your kvass ready. Use a sieve to obtain the clear liquid. It should smell like other fermented food, a bit acidic, you have experience with this stuff so you will know if it is OK. You can use the beets to make a soup or a salad. My kids like to snack them. Keep your beet kvass in a bottle in the fridge, it will be fine there for at least several weeks. You can drink a small glass (or half a glass, or just a few sips) every day. It is full of vitamins, iron and probiotics. You can also make acidic beet soup with it, it is delicious. Just don't let it boil because you'll loose all the properties

Mhm, dunno, I wouldn't. Kombucha is a SCOBY and it can hijack your beet kvass hahah just like some people hijack other people's threadsSeriously now, kombucha is a different kind of fermentation. Even if you add filtered kimbucha without any visible SCOBY, there are some tiny invisible scraps of it and they will multiply... They multiplied even when I made home made facial tonic with clear kombucha (mixed with rose water and other stuff). And it is not lactofermentation anyway... So nope, I don't think it would work.

I noticed that when there are a lot of scoby's in the jar the flavour is enhanced : deeper and more generous (not easy to explain)
(Maybe we could open a new thread elsewhere ? Chat room ? Playground - kitchen ? I don't know, feel free to open it if you want)

I just ran 30 min !!! 4524 steps and 3,57 km measured on the map, This seems incredible !
50 days ago I couldn't even run 2 min. neilarey , Damer , TheRaven and the others I don't know : your programs make miracles.
