    Pumpkin Soup

    Ohhh now you have made my day was wondering what else I can do with the squash we have grown (we got a tiny maybe 1 oz ) pie pumpkin and a butternut squash and a summer squash. will have to give this a try for supper tonight.

    Butternut Tart, Butternut with Fusili (or Penne or...), I am not a big deep fry fan, so I put it in the oven. A variation on the pumpkin soup w. mushrooms & ginger.
    I am a big Nigel Slater fan. His stuff is easy to make and he keeps the ingredient list short.
    If you are vegan or try to cut down on the meat:
    Here is an Indian/vegan stew, the curry leaves are not essential IMHO. Roasted cumin seeds work well if there are no mustard seeds at hand. Some rice as a side. Or a vegan chilli. A cup of strong coffee works well instead of the vegan dark chocolate.

      We often get a butternut squash at least once a week, usually roast seasoned cubes in the oven. Having the squash as the veg part of Thai Pad Krapow Moo.
