    White beans cooking time

    Hello,

    I am using the recipe Easy White Beans, and despite following the 30 min cooking time at low heat after boiling the water, a lot of water is still there after the 30 min. I looked at the packaging of the beans, it says 45-90 min cooking time. I had let the beans soak overnight.

    If the beans are soft, you can always dump the rest of the water. Think of them cooking in water like noodles cook. You won't get the noodles to absorb all the water. The same goes for beans, lentils, and other foods in the family.

    If they're soft, eat away! I cook beans dry and I always throw out the water afterward.

      Beans cooking time depends a lot on the beans age, hence the 45-90 min range. They take longer the older they become, after a certain age the don't soften at all.
      The minerals/lime in the water can also affect cooking time. You can put a bit, like half a tsp., of baking soda in the soaking water, that should help if you have hard water. Also works for chickpeas.
      The water is supposed to be there, like Warmaker pointed out. Only rice soaks up all the cooking water.
      If you want to use the cooking water, you can make a brown roux, fill up with the cooking water, season and put that sauce with the beans.
