Tomato Honey Eggplant
An easy way to cook an eggplant - coat it with tomato paste and bake covered with foil. For extra flavor and sweetness add cinnamon and honey to it and some crumbled feta to top it off.
Tips: you can blend your own tomatoes for this but store-bought paste works really well too. Look for the one that already has onions and other herbs already added to it.

1 medium eggplant
1tbsp olive oil
cinnamon for taste
6tbsp tomato paste
2 oz (2 small slices) feta cheese (optional but recommended)
1 Wash and cut the eggplant into thin slices.
2 Put the eggplant into an oven-safe pan and drizzle with olive oil
3 Then coat in honey and sprinkle with cinnamon
4 Cover with tomato paste.
5 Crumble feta cheese on top and cover with foil.
6 Bake at 180 ºC 356 ºF fan in the middle of the oven for 45 minutes (uncover in the last 5 minutes to brown).
