Ingredients

1 medium eggplant
pepper
salt
garlic powder

Instructions

1 Pierce the eggplant with a fork a few times, place in a foil boat and wrap it up.

2 Bake in the oven at 200° C (392° F) for 45 minutes (you may have to flip it one once half way through). When it's done it should feel soft as a spoonge.

3 When the eggplant is cool enough to work with, cut it open and scoop out the inside.

4 Blend the eggplant with a hand blender or mash it with a fork and add spices.
