Ingredients

1 courgette
1 carrot
4 tbsp tomato paste
1 tsp onion
1 tsp honey
salt and pepper for taste

Instructions

1 Wash and peel the courgette and the carrot. Slice the courgette, the carrot and the onion into thin rings.

2 Place everything into oven-safe pan, add honey, season and cover with tomato paste. Cover with foil.

3 Bake in the oven at 200° C (392° F) for 45 minutes. When it's done it should feel soft all the way through.

4 Once cool enough blend with a hand blender until spooth. Can be served hot or cold.
